Yoghurt pineapple ice with mint

This is one of those super healthy frozen desserts. It's made with fruit, yoghurt, a touch of sugar, and herbs. It's super easy and delicious.
This is smooth ice, sweet-tart in flavour, and the slivered mint leaves add the magic. It is light, fresh, and so easy to eat—watch out! You can serve it as a dessert, but I also like to serve it as a palate cleanser between courses.
This thin volume of ice cream, gelato, and ice cream is quite a favourite of mine. Most of them are boozy. With unique flavours and wonderfully paired with liquor, these desserts are for extravagant dinners that always end well.

Ingredients:
1 small pineapple, peeled and eyes removed + a bit for garnish
1 cup plain Greek yogurt
1 1/2 -2 cups sugar, depending on the sweetness of the pineapple
15 mint leaves, sliced
If you can buy a cleaned pineapple, do so. Remove skin, as much of the eyes as possible, and the central fibrous pith. Purée with 1/2 cup sugar to sit with. Taste and adjust sugar as per your palate. You are looking for a delicate sweetness that does not overwhelm the fruit.
Mix in the yoghurt and mint. Churn in your ice cream machine as per the machine instructions. Alternatively, you can freeze in your freezer, turning it with a fork every hour for 4-6 hours.
Serve garnished with the diced pineapple and a mint leaf or sprig.
