I got tired of paying $18 for a crappy parfait, usually consisting of sweetened, canned fruit and combinations to favor large volume at cheap costs. Here is my creation that is so good!

Must have: Yogurt, plain or vanilla Greek yogurt is good too. Fruit: apples, bananas, pineapples, peaches, plums, any berries of choice. Essentially any fruit of choice. I stick to fruit in season, so lots of melons, pineapples and berries in the summer. Fall is usually bananas, oranges, and other varieties. Also consider small quantities of well made (Unsweetened and unbleached) dried fruit, though this should not be the staple. A mix is good. Use fruit that are super sweet, some sour, some soft and some with crispness. Please no canned fruit. Granola of choice. Or muesli, or your favorite cereal (Fruit loops are great) Honey or agave syrup or maple syrup.
Optional: Fresh herbs, mint, lavender, thyme, other Sauces, fruit sauces, chocolate or caramel
Remember, parfaits are not formula based, use what you have and what you like. This is a dish to be super creative on, it will be delicious anyway. Go for the unknown and discover new flavors. The magic of a good parfait is the balance of sour and sweet, crunchy and soft. Enjoy
