I love canapés. They are small bites that are packed with flavour. Here is a beautiful recipe that fits this criteria.
Friends always bring me food and ingredients from around the world. This time, it was cans of famed Nuri sardines. Nuri is one of the oldest artisanal sardine packers in the world, based in Portugal. They specialize in sustainably caught sardines packed in several dressings. I was fortunate enough to receive the spiced sardines in olive oil. They were fabulous.
This is a simple canapé that highlights the beauty of the sardine. The tomato purée is light and flavourful, and the spicy sardine adds a fishy pop. Simple and elegant, you will want at least a few of these bites before you are happy.

Ingredients:
2 ripe tomatoes, chopped
1 garlic clove
1/2 teaspoon pepper
Salt, to taste
2 tablespoons olive oil
Canned sardines
Sourdough baguette
Slice the baguette on the diagonal and toast lightly. Set aside.
Add the tomatoes, garlic, pepper, salt, and olive oil to a blender and purée until very smooth.
Spoon a tablespoon of the tomato onto the toast. Top with a piece of sardine.
Serve immediately.
NOTE: This is a wet canape, so assemble right before serving and bring it to your guests immediately.
