Mozzarella, spinach and thyme canapè

Simplicity is the magic of good flavour. This is one of those simple dishes that pack an impact on your guests.

The canape comprises of gooey mozzarella layered with spinach and a light sprinkling of thyme and pepper. Elegant and beautiful, these canapes are delicious.

Ingredients:

1 ball of mozzarella

30 baby spinach leaves

Olive oil drizzle

Thyme, to sprinkle

Salt, to taste

Pepper to sprinkle

Sourdough or multigrain bread toasted

Heat an oven to 375° F with a rack in the middle.

Load the toast with alternate slices of mozzarella and 2-3 spinach leaves per section. Sprinkle with thyme, pepper and salt.

Bake the toast for 5-7 minutes until the cheese is melted. Drizzle with a few drops of olive oil and serve immediately.
