Corn is one of my favourite summer vegetables to grill. I was looking for a recipe for a Mexican-themed meal, and I could not find anything. Every recipe I looked at seemed blah!
So I went to the kitchen and started playing with flavours, every Mexican flavour I could think of. I started by deciding on mayo, instead of butter, and then added a bunch of flavours and spices typical to the cuisine. here is the result, it turned out superb. Creamy, tart and cheesy, this dressing has a ton of great flavour.

For about 6 corn.
Ingredients:
1/4 cup mayonnaise
2 teaspoons lime juice
Generous pinch of Mexican oregano
1 tablespoon finely diced Mexican-style pickled onions or jalapeños
I tablespoon of finely grated Mexican cheese blend
1/2 teaspoon Mexican chilli powder, chipotle, Ancho, or pasilla
1 tablespoon cilantro, finely diced
Salt to taste
6 ears of corn, shucked
Mix all the ingredients together. taste for salt, sour, and spice and adjust as needed.
Roast the corn directly over burning hot coals or on a very hot grill, charring the kernels. When the corn is evenly charred, spread the dressing over the corn while still hot to melt the cheese. Enjoy.
