Erasto’s Coleslaw

I absolutely love coleslaw. I have to order it if it is on the menu. I have had many versions, including Asian, Carolina-style, root vegetable, and fresh fruit slaw. This recipe is my absolute favourite!

1/2 cup sour cream

1/2 cup mayo

3 tablespoons Dijon Mustard

2 teaspoons honey

2 teaspoons champagne vinegar or other mild wine vinegar

6 tablespoons dried currants (dried Craisins is or dried sour cherries will work, too)

1/2 head cabbage, shredded fine

1 carrot grated

1 apple grated or finely sliced

Salt and pepper to taste.


Mix everything together and allow to pickle for at least one hour.
