Avocado and ruby grapefruit with chilli

Great ingredients make for great salads. This is a very simple salad with just a few ingredients, but it's oh-so good.

The soft, creamy avocado contrasts beautifully with the crisp, sweet-tart-bitter grapefruit. The pop of heat from the chilli and earthy cilantro complements it. This is a unique salad—simple but one with great flavours that come together beautifully. It will surprise your guests every time.

This is a beautiful cookbook from a master chef. The River Cottage series is phenomenal, filled with approachable recipes and educational content. I highly recommend this complete series.

Ingredients:

1 ruby grapefruit, segmented

1 avocado, sliced

1 small red chilli, minced

Olive oil drizzle

Sea salt, to taste

Pepper, to taste

Cilantro, torn


Arrange the grapefruit and avocado slices randomly on a large platter. Sprinkle the red chilli over the fruit. Grind some sea salt and pepper over the salad and drizzle some olive oil all over. Garnish with cilantro.


Serve immediately.
